Las Vegas just raised the culinary bar yet again: Bazaar Meat by José Andrés has officially opened its dramatic new home at The Palazzo at The Venetian Resort. Launching September 4, this 20,000 square-foot reimagining of José Andrés’ award-winning concept promises to be larger, bolder, and even more Vegas than before.

A Celebration of the Carnivorous
“Since Day 1, Bazaar Meat has been one of my favorite restaurants to send friends to—it’s dinner and a show, an incredible celebration of the carnivorous,” shared Chef José Andrés. Now at The Venetian, the experience expands with new show-stopping dishes while honoring classics like Cotton Candy Foie Gras, Caviar Cones, and the indulgent Stemple Creek Black Angus Vaca Vieja.
Executive Chef Frank Medina introduces bold additions: Josper Roasted Leeks, Live Scallop Ceviche, and Beef Tenderloin Rossini. For dessert? The illuminating Sphere Graffiti — a chocolate dome smashed open tableside with a mallet, a playful nod to Sphere Las Vegas.
Drinks With Drama
The beverage program is as theatrical as the food. Guests can sip on the iconic Magic Mojito poured over cotton candy, the frozen-to-order Nitro Caipirinha, or build their own super-chilled martini with a new Interactive Martini Service. Spirit-free options like the savory Cuadratura keep the creativity flowing for all palates.
A Design Inspired by Spain’s Feria de Jerez
Design takes center stage thanks to Studio Munge and KGA Architecture. Guests enter through a lacquered corridor of bull motifs before arriving at a main dining room anchored by a blazing open-fire kitchen. The lounge dazzles with oxblood leather, velvet banquettes, and a tapas kitchen, while private dining rooms and a covered terrace offer intimacy within grandeur.
The entire design narrative is rooted in the cultural spirit of Andalusia’s Feria de Jerez, reimagined as a world where heritage, fantasy, and gastronomy collide.

“Bazaar Meat by José Andrés is more than just a restaurant, it’s a destination in its own right,” said Patrick Nichols, CEO of The Venetian Resort. With space for over 428 guests, three private dining rooms, a dedicated event space, and year-round terrace seating, the venue is both expansive and intimate — a true Las Vegas spectacle.
